Crispy chicken sandwich.
In a bowl, combine buttermilk, salt, black pepper, and half of the garlic and onion powder. Add the chicken breasts and ensure they are well coated. Cover and refrigerate for at least 1 hour or overnight for best results.
In a shallow dish, mix together flour, cornstarch, paprika, remaining garlic powder, onion powder, and a pinch of salt and pepper.
Remove the chicken from the buttermilk marinade, allowing excess to drip off. Dredge each piece in the flour mixture, pressing down to ensure an even coating.
In a large skillet, heat vegetable oil over medium-high heat. Once hot, add the coated chicken pieces and fry until golden brown and cooked through, about 5-7 minutes per side. Remove and drain on paper towels.
Toast the burger buns. Spread mayonnaise on the bottom half of each bun. Place a fried chicken piece on each, add lettuce, and tomato slices. Top with the other half of the bun.
