Crispy chicken sandwich with lettuce and tomato.
In a bowl, combine the buttermilk, paprika, garlic powder, onion powder, salt, and pepper. Add the boneless chicken thighs and marinate for at least 1 hour or overnight in the refrigerator.
In a separate bowl, mix together the flour and cornstarch. This will be used to coat the chicken.
Heat the vegetable oil in a deep pan over medium-high heat. Remove the chicken from the marinade, allowing excess to drip off, then dredge in the flour mixture. Carefully place the coated chicken into the hot oil and fry for about 6-8 minutes on each side or until golden brown and cooked through. Remove and drain on paper towels.
On each sandwich bun, place a piece of crispy chicken, top with lettuce leaves and slices of tomato. Close the sandwich with the other half of the bun.
