Preheat and prepare

Preheat oven to 475°F (245°C). If using a pizza stone, place it in the oven before preheating. Lightly dust a pizza peel or baking sheet with 1/4 cup flour or cornmeal.

Bring 1 lb pizza dough to room temperature for 20–30 minutes so it stretches easily. On a lightly floured surface, press and stretch dough into a 12–14 inch round (or rectangle to match pan). Transfer stretched dough to the prepared peel or baking sheet. Brush the outer 1/2-inch crust lightly with 1 tbsp olive oil.

Make chicken-club sauce

In a small bowl whisk together 1/2 cup mayonnaise, 1/4 cup ranch dressing, 1/2 tsp garlic powder, 1/4 tsp onion powder and 1/4 tsp black pepper until smooth. Taste and adjust seasoning. Spread sauce evenly over the dough leaving the oiled crust exposed (about 1/2 inch).

Prepare chicken and bacon

If chicken is not cooked, poach or grill two medium chicken breasts: season with 1/4 tsp salt and 1/4 tsp black pepper, sear 2–3 minutes per side over medium-high heat then finish in oven at 350°F for 10–12 minutes until internal temperature reaches 165°F. Let rest 5 minutes and shred or dice. Cook bacon until crisp (pan-fry or bake at 400°F for 12–15 minutes), then chop into pieces.

Evenly distribute 1 cup shredded mozzarella over the sauced dough. Scatter the prepared 2 cups shredded/diced chicken across the pizza. Sprinkle 1 cup shredded cheddar over the chicken. Add the chopped bacon slices across the top. Scatter 1/4 cup thinly sliced red onion if using.

Arrange thin tomato slices over cheese and toppings, slightly overlapping as desired.

Slide pizza onto the preheated stone or place the baking sheet in the oven. Bake 10–14 minutes until crust is golden and cheese is bubbly and starting to brown. Cooking time varies with oven and thickness of dough—watch for a golden rim and melted, bubbling cheese.

Remove pizza from oven. Immediately brush crust lightly with 1 tsp olive oil. Let rest 2–3 minutes.

Scatter 1 cup shredded green leaf lettuce over the baked pizza so it stays crisp. Optionally garnish with 1 tbsp chopped fresh parsley. Slice into 8 pieces and serve hot.
