Prepare Topping

If using whole pepperoni slices from the package, separate slices and lay them out on a plate or sheet. If you prefer crispier pepperoni, place slices on a paper-towel-lined plate and blot gently to remove excess surface oil.

Optional Light Oil Brush

If you want the pepperoni to crisp and brown evenly, lightly brush one side of each slice with olive oil (about 1 tsp for the whole cup). This step is optional — many pizzerias use pepperoni as-is from the package.

Arrange on Pizza

Distribute the pepperoni slices evenly across the assembled pizza (sauce and cheese applied). Use about 1 cup of slices for a standard 12-inch pizza for even coverage and to match typical Mazzio's portioning.

Bake and Crisp

Bake the pizza according to your pizza dough and topping directions (typical home oven: 475°F / 245°C for 10–12 minutes on a preheated pizza stone or steel, or as directed by dough recipe). The pepperoni will render fat, slightly cup at the edges, and brown. If you prefer extra crispiness, during the last 1–2 minutes move the oven to broil (watch carefully to avoid burning).

When the pizza comes out of the oven, immediately sprinkle optional crushed red pepper flakes and dried oregano over the hot pepperoni so the aromatics release. Let the pizza rest 2–3 minutes, then slice and serve.
