Prepare peppers

Wearing gloves if you prefer, wash and dry the jalapeños. Trim off the stem ends, then slice crosswise into 1/8–1/4 inch (3–6 mm) rounds depending on how pronounced you want the rings on the pizza. If you want less heat, remove some or all of the seeds and inner membranes before slicing.

Toss with oil and season

Place the sliced jalapeños in a small bowl. Add the olive oil, kosher salt, black pepper, and optional sugar. Toss gently to coat all slices evenly. The oil helps the peppers roast/cook quickly on the pizza and the salt seasons them through.

Optional quick-pickle (for milder, brighter flavor)

If using quick-pickling, place the sliced jalapeños in a heatproof jar or bowl. Pour 120 ml pickling brine (store-bought or a simple mix of equal parts white vinegar and water with a pinch of salt and 1 tsp sugar warmed briefly) over the peppers so they are submerged. Let sit at room temperature for at least 15 minutes (or refrigerate for 1 hour for more flavor). Drain well before using on pizza. Reserve a small amount of brine if you like pickled flavor on the finished pizza.

Top the pizza

Distribute the prepared jalapeño slices evenly over the assembled pizza after you’ve applied sauce and cheese. For best results, place slices so they aren’t layered too thickly; overlapping is fine but avoid big clumps to ensure even cooking.

Bake

Bake the pizza according to your crust and topping recipe—typically at 450–500°F (230–260°C) for 8–12 minutes for a home oven, or 4–6 minutes in a very hot pizza oven—until the crust is golden and cheese is bubbly. The jalapeños will blister slightly and mellow in heat as they roast.

Finish and serve

If desired, after the pizza comes out of the oven, squeeze the optional 1 tsp lime juice over the jalapeño-topped pizza or drizzle a little reserved pickling brine for brightness. Slice and serve immediately.
