Slice and prep

Trim any excess fat from the ham slices. If using a large ham steak, slice into 1/8- to 1/4-inch thin slices (about 12 oz total). If using pre-sliced deli ham, stack and cut into bite-sized pieces (roughly 1-inch squares). Pat dry with paper towels to remove excess moisture so the ham browns nicely.

Make glaze

In a small bowl whisk together olive oil, honey, smoked paprika, garlic powder, black pepper, and sea salt until combined. This glaze adds color and a touch of sweetness to the ham so it complements pizza cheese and sauce.

Coat the ham

Place the prepared ham pieces in a shallow bowl or rimmed baking sheet. Pour the glaze over the ham and toss gently with tongs or a spatula until all pieces are evenly coated. Let rest 5 minutes to allow flavors to adhere.

Heat a large nonstick or cast-iron skillet over medium-high heat. Add the glazed ham in a single layer (work in batches if needed). Cook 1 to 2 minutes per side until edges are lightly browned and the glaze is slightly caramelized. If slices were left whole, roughly chop the seared ham into bite-sized pieces (roughly 1/2 to 1 inch). Allow pieces to cool to room temperature before placing on pizza to avoid melting the cheese unevenly.

Toss the cooled ham pieces with the chopped parsley to brighten flavor and add a fresh note to the topping.
