Prepare the feta
Unwrap the 8 oz block of feta and pat it dry with paper towels to remove excess brine. Crumble the feta into a medium mixing bowl with your fingers or a fork into bite-sized pieces. Aim for mostly small crumbles with some slightly larger pieces for texture.
Make the dressing
In a small bowl, whisk together 2 tablespoons extra-virgin olive oil, 1 tablespoon fresh lemon juice, 1 tablespoon finely chopped fresh oregano (or 1 tsp dried), 1 teaspoon freshly ground black pepper, and the optional 1 minced garlic clove. If using, add 1/2 teaspoon red pepper flakes and 1/2 teaspoon honey. Taste and adjust seasoning — the lemon brightens the feta and the oil helps the topping melt slightly on hot pizza.
Combine
Pour the dressing over the crumbled feta and gently fold with a spoon until evenly coated. Do not overmix; you want crumbles to remain distinct. Let the mixture sit for 5–10 minutes at room temperature so flavors meld.
Use on pizza
If applying to an assembled pizza before baking: scatter the feta mixture evenly over the pizza, distributing crumbles so each slice gets some. Because feta does not melt like mozzarella, place it on top of other cheeses or sauce so it warms and softens without burning. Bake the pizza according to dough/topping directions (typical home oven 475°F / 245°C for 10–12 minutes). If adding after baking: spoon warm feta over the hot pizza immediately after it comes out of the oven for a bright, tangy finish.
Garnish and finish
Once the pizza is out of the oven, sprinkle 1 tablespoon finely chopped parsley over the feta-topped pizza for color and freshness. If desired, finish with a light drizzle (about 1/2 teaspoon) of extra-virgin olive oil or a pinch more red pepper flakes.
Storage
Store any leftover feta topping in an airtight container in the refrigerator for up to 4 days. Stir gently before using again; if it firms from the fridge, let it come to room temperature for 15–20 minutes and re-whisk the dressing if separated.
