Prep and slice

Place bacon slices on a cutting board. If slices are long, cut each slice crosswise into 1/2–1-inch pieces so they distribute evenly on the pizza.

Optional dry mix

In a small bowl combine black pepper, smoked paprika and garlic powder. Toss the bacon pieces with the cornstarch (if using) and the spice mix to coat evenly. If making candied bacon, sprinkle the brown sugar over the pieces instead of using cornstarch and spices.

Cook bacon on stovetop (crispiest)

Heat a large skillet over medium heat and add olive oil. Add bacon pieces in a single layer (work in batches if needed). Cook, stirring occasionally, until browned and crisp at the edges, about 6–10 minutes depending on thickness. If you used brown sugar, watch closely and stir to avoid burning; sugar will caramelize and create a glaze. Transfer cooked bacon to a paper-towel-lined plate to drain.

Oven method (alternate)

Preheat oven to 400°F (200°C). Line a rimmed baking sheet with foil and place a wire rack on top. Arrange bacon slices or pieces on the rack. Bake 12–18 minutes for pieces (longer for whole slices) until crisp. For candied bacon, sprinkle brown sugar over pieces before baking; sugar will melt and caramelize. Remove and drain on paper towels.

Cool and crumble

Let the bacon cool for a few minutes; then crumble or separate into bite-sized pieces. Taste and adjust seasoning with a small pinch of extra black pepper if desired.

Use the prepared bacon pieces as a topping on pizzas. For a single 12" pizza, scatter about 1/3 to 1/2 cup of cooked bacon pieces evenly over sauce and cheese before baking. Adjust quantity to taste; reserve some pieces to add after baking for extra texture.

If adding after bake (for maximum crispness), bake the pizza with sauce and cheese, then immediately scatter 1/3 cup of bacon pieces on the hot pizza so they warm but keep crisp texture.

Store leftover cooked bacon in an airtight container in the refrigerator for up to 5 days. Re-crisp in a 350°F (175°C) oven for 5–7 minutes or in a skillet over medium heat for a few minutes before using on another pizza.
