Dough & Base
prepare oven and dough
Preheat the oven to 500°F (260°C) with a pizza stone or an inverted baking sheet placed on the middle rack. If using a lower-temperature home oven, preheat to the highest setting and allow the stone/sheet to heat at least 30 minutes. Lightly dust a work surface with the all-purpose flour.
Stretch or roll the pizza dough into a 12-inch (30 cm) round: press from the center outward leaving a slightly thicker 1/2–3/4-inch rim. Transfer the shaped dough to a piece of parchment paper or a floured pizza peel. Brush the center lightly with the olive oil to help prevent sogginess.
Sauce & Cheese
Spread the pizza sauce evenly over the dough, leaving the rim uncovered (about 1/2 inch). Use the back of a spoon to create a thin, even layer.
Sprinkle the shredded mozzarella evenly over the sauce, then scatter the grated parmesan on top to encourage browning and flavor depth.
Toppings
If artichoke hearts are packed in oil or marinade, drain them well and pat lightly with paper towel. Quarter any large pieces so they distribute evenly across the pizza.
Evenly distribute the quartered artichoke hearts over the cheese. Add sliced black olives, diced red onion, and sliced bell pepper in an even layer so each buffet slice will have a mix of toppings.
Sprinkle the dried oregano, crushed red pepper flakes, kosher salt, and freshly ground black pepper evenly over the toppings for balanced seasoning.
If using fresh basil, scatter torn leaves over the top either before baking (for more infused flavor) or immediately after baking (for fresh aroma and color).
Carefully transfer the pizza on the parchment to the preheated pizza stone or inverted baking sheet. Bake at 500°F (260°C) for 8–12 minutes, rotating once halfway if your oven has hot spots, until the crust is golden and the cheese is bubbly and lightly browned. If using a lower-temperature oven, bake 12–16 minutes and watch for desired browning.
Remove the pizza from the oven and let it rest 2–3 minutes. If you added basil before baking and prefer it fresher, add additional torn basil now. Slice into buffet-friendly pieces (8–12 slices) and serve hot or keep warm in a low oven (200°F / 95°C) for buffet service.
