Iced Tea Base
Brew concentrated tea
Bring 3 cups of water to a near boil (about 200°F / 93°C). Add 3 black tea bags, remove from heat, and steep for 5 minutes for a robust but not bitter concentrate. After steeping, remove and discard tea bags, gently pressing them against the side to extract remaining liquid.
Allow the brewed tea to cool to room temperature (15–20 minutes) or place in the refrigerator until chilled (about 30 minutes). If you need it quicker, transfer to a shallow container and chill over an ice bath, stirring occasionally.
Fill a 22 oz (about 650 ml) serving cup with approximately 2 cups of ice (or enough to come up near the top but leave space for liquid).
Sweetener
Add 6 tablespoons of simple syrup to the chilled brewed tea. Stir to combine. (6 tablespoons of 1:1 simple syrup equals about 90 ml of syrup and will yield roughly 180 calories for the full 22 oz serving when combined with tea.) Taste and adjust: add up to 1 more tablespoon if you prefer slightly sweeter.
