Preheat and prepare pan
Preheat oven to 400°F (200°C). Lightly oil a 9-inch round ovenproof skillet or pie dish with 1 tablespoon olive oil, making sure the bottom and sides are evenly coated.
Make egg batter
In a medium bowl whisk 6 large eggs until blended. Add 1 cup whole milk and whisk to combine. Sift in 1/4 cup all-purpose flour, 1/2 tsp baking powder, 1 tsp dried oregano, 3/4 tsp salt and 1/4 tsp black pepper. Whisk until smooth and slightly frothy. Let rest 3 minutes so the flour hydrates.

First layer of sauce and cheese
Spread 1/4 cup of the tomato pizza sauce evenly over the par-baked egg layer. Sprinkle about 3/4 cup shredded mozzarella and half of the grated parmesan over the sauce.
Second egg layer
Carefully pour the remaining egg mixture over the cheese layer, pouring slowly and keeping the layer even. The poured mixture will surround and partially cover the cheese, creating the 'crustless' body. Return the pan to the oven and bake for 10–12 minutes until the edges are golden and the center is almost set (it will still jiggle slightly).
Finish & Serve
Final bake
Return the assembled pizza to the oven and bake 8–10 minutes more, until the cheese is melted, bubbling, and lightly golden and the egg base is fully set (no wet batter). If you prefer browned top, switch to broil for 1–2 minutes watching closely.
Rest and garnish
Remove from oven and let rest 5 minutes to set. Scatter fresh basil leaves over the top and sprinkle red pepper flakes to taste. Slice like a 9-inch pizza into 6–8 wedges and serve warm.
