    Form and season patties

    Divide ground beef into two equal portions (for two sandwiches) and form into thin patties slightly larger than your bread (about 3.5–4 inches). Do not overwork the meat. Press a shallow dimple in the center of each patty to prevent puffing. Season both sides with kosher salt, black pepper, and a light sprinkle of Worcestershire sauce.

    Cook patties

    Heat a large skillet or griddle over medium-high heat and add 1 tablespoon vegetable oil. When shimmering, place patties on the hot surface. Cook 3 minutes on the first side without moving to develop a crust. Flip and cook 2–3 minutes on the second side for medium (internal ~160°F). During the last minute of cooking, top each patty with two slices of Swiss cheese to melt. Remove patties to a plate and tent loosely with foil.

    While patties cook (or in a separate skillet), warm 1 tablespoon butter and 1 teaspoon olive oil in a medium skillet over medium-low heat. Add the thinly sliced onion, sprinkle with 1/4 teaspoon sugar and 1/4 teaspoon kosher salt. Cook, stirring occasionally, 20–25 minutes until deep golden and sweet, scraping browned bits from the pan. If onions begin to stick or look dry, add up to 1 tablespoon water. Remove from heat and keep warm.

    Prepare bread: Spread Dijon mustard and mayonnaise (if using) on the interior sides of each rye slice. On two slices, place a cheese-topped patty on each, then divide the caramelized onions evenly over the patties. Add optional pickles if desired, then top with the remaining bread slices, mustard side down.

    Butter and grill sandwiches: Spread softened butter evenly on the outside of each sandwich (both top and bottom). Heat the same skillet or griddle used for patties over medium heat. Place sandwiches in the skillet and press gently with a spatula or a heavy pan. Grill 3–4 minutes per side until bread is golden brown and crisp and cheese is fully melted. Adjust heat as needed to avoid burning.

    Rest and serve: Transfer sandwiches to a cutting board and let rest 1 minute. Cut each sandwich in half diagonally and serve immediately while hot.
