    Preheat and prepare carrots

    Preheat the oven to 425°F (220°C). Line a rimmed baking sheet with parchment paper or lightly oil it. Pat the carrots dry. If using larger carrots, halve or quarter them lengthwise to ensure even roasting; baby carrots may be left whole.

    Toss and roast

    In a large bowl, toss the carrots with 2 tbsp olive oil, 1 tsp kosher salt, 1 tsp freshly ground black pepper, and 1 tsp minced garlic until evenly coated. Spread the carrots in a single layer on the prepared baking sheet without overcrowding. Roast for 20–30 minutes, stirring or shaking the pan halfway through, until the carrots are tender and caramelized at the edges (time depends on size). If carrots are still firm, roast an additional 5–10 minutes.

    When done, remove from oven and let cool slightly (5 minutes) so the yogurt sauce won’t split when plated.

Greek Yogurt Sauce

    Mix yogurt sauce

    While the carrots roast, combine 1 cup Greek yogurt, 1 tbsp fresh lemon juice, 1 tsp lemon zest, 1 tsp olive oil, 1 tsp dried oregano, 1 tsp honey or maple syrup, 1/2 tsp fine sea salt, and 1/4 tsp freshly ground black pepper in a medium bowl. Whisk until smooth and taste; adjust salt, lemon or honey to balance acidity and sweetness. Keep chilled until ready to serve.

    If you prefer a looser sauce for drizzling, whisk in 1–2 tbsp water or milk until desired consistency is reached.

Chili Crisp & Sesame Crunch

    Prepare sesame and crunch mix

    Toast 2 tbsp sesame seeds in a dry skillet over medium heat, stirring, until fragrant and lightly golden (about 2–3 minutes). Remove and let cool. In the same skillet, warm 2 tbsp chili crisp with 1 tsp toasted sesame oil for 15–30 seconds to blend flavors, then remove from heat. Stir in 3 tbsp crispy shallots (or fried onions), 3 tbsp crushed toasted almonds or pistachios (if using), 1/2 tsp smoked paprika and 1/4 tsp red pepper flakes if using. Mix in the toasted sesame seeds. Taste and adjust chili crisp quantity to your preferred heat level.

    Reserve a tablespoon of the crunchy mix separately for final garnish so you have a pronounced texture contrast on top.

Garnish & Finish

    Assemble the dish

    Spread a generous layer of the Greek yogurt sauce on a serving platter (about half to two-thirds of the sauce). Arrange the warm roasted carrots on top of the yogurt in a single layer or slightly overlapping. Drizzle the warmed chili crisp mixture evenly over the carrots, allowing some oil to run onto the yogurt.

    Finish and serve

    Scatter the reserved crunchy mix over the top for texture. Sprinkle chopped fresh dill or parsley (about 2 tbsp) and a light drizzle of extra olive oil (1 tsp). Serve with lemon wedges alongside for squeezing. Serve warm or at room temperature.

    Leftovers: Store components separately (carrots and yogurt sauce) in airtight containers in the refrigerator for up to 3 days. Reheat carrots gently in a 350°F (175°C) oven for 8–10 minutes before assembling.
