Prepare the Plantains
Peel the ripe plantains and slice them diagonally into 1-inch thick pieces.
Cook the Plantains
In a large skillet, melt the unsalted butter over medium heat. Add the sliced plantains and cook for about 3-4 minutes on each side until they are golden brown and slightly caramelized.
Add Sugar and Rum
Sprinkle the brown sugar over the plantains and pour in the dark rum. Add the cinnamon and a pinch of salt. Stir gently to coat the plantains evenly.
Caramelize
Increase the heat and cook for another 2-3 minutes, allowing the sugar and rum to bubble and create a caramel-like sauce. Stir occasionally to prevent burning.
Serve
Remove from heat and serve warm as a delicious dessert.
