Preparation

Preparing the Steak

1. Season the Steak

Rub the Chateaubriand steak with olive oil, salt, and black pepper. Allow it to sit at room temperature for about 30 minutes.

2. Cook the Steak

Preheat your grill or skillet over high heat. Once hot, sear the steak for 4-5 minutes on each side for medium-rare, or adjust time to your preference.

3. Rest the Steak

Remove the steak from the heat and let it rest for 10 minutes before slicing.

Preparing the Sides

4. Prepare Asparagus

Trim the ends of the asparagus and toss with olive oil, salt, and pepper. Roast in the oven at 400°F (200°C) for 10-12 minutes.

5. Prepare Potatoes

Boil or roast potatoes until tender. If making mashed potatoes, mash with butter and cream. Season with salt and pepper to taste.

Preparing the Sauces

6. Make Tomato Provincial Sauce

In a saucepan, combine chopped tomatoes, garlic, basil, and olive oil. Simmer for 20 minutes until thickened.

7. Make Garlic Butter Sauce

Melt butter in a pan, add minced garlic, and cook until fragrant. Season with salt and parsley.

Serving

8. Plate the Dish

Slice the rested Chateaubriand and arrange on a plate. Serve with asparagus and potatoes, alongside the sauces and bread sticks.
