Preparation of Balsamic Reduction

Make the Balsamic Reduction

In a small saucepan, bring 1 cup of balsamic vinegar to a simmer over medium heat. Reduce the heat to low and let it simmer until it thickens and reduces to about 1/4 cup, approximately 15-20 minutes. Set aside to cool.

Cooking Scallops

Wrap and Cook Scallops

Preheat your grill or grill pan to medium-high heat. Wrap each scallop with a slice of bacon, securing it with a toothpick if necessary. Place the wrapped scallops on the grill and cook for 2-3 minutes on each side, until the bacon is crispy and the scallops are opaque.

Grill the Lemon

While the scallops are cooking, slice the lemon in half and place it cut-side down on the grill. Grill for about 2-3 minutes until charred.

Plating

Serve

On a plate, arrange a handful of dressed arugula. Place the bacon-wrapped scallops on top and drizzle with the balsamic reduction. Garnish with the grilled half lemon and sprinkle sumac over the dish.
