Prepare the Poaching Liquid
In a large pot, combine 4 liters of water with 1 cup of salt. Stir to dissolve the salt completely.
Bring to a Boil
Place the pot over high heat and bring the salted water to a rolling boil.
Poach the Snow Crab
Once the water is boiling, carefully add the racks of Atlantic Canadian snow crab to the pot. Cover and allow to poach for about 5-7 minutes.
Check for Doneness
After 5-7 minutes, the crab is done when it is heated through and the shells turn bright orange. Remove from the pot carefully.
Serve
Serve the poached snow crab hot, accompanied by melted butter or your choice of dipping sauce.
