Method

Preparation

1

Prepare the Fruit

Wash and hull the fresh fruit of your choice. If using peaches, peel them. Cut the fruit into smaller chunks for easier blending.

2

Blend the Mixture

In a blender or food processor, combine the fruit chunks, granulated sugar, lemon juice, water, and a pinch of salt. Blend until the mixture is completely smooth.

3

Strain (Optional)

For a smoother texture, you can strain the mixture through a fine mesh sieve to remove any pulp or seeds.

4

Add Optional Ingredients

If desired, add fresh mint leaves and vanilla extract to the mixture and blend again for a few seconds until combined.

Freezing

5

Transfer to Freezer Container

Pour the blended fruit mixture into a shallow container or a sorbet maker. If using a shallow container, make sure it has a lid.

6

Freeze the Mixture

Place the container in the freezer. If using a shallow container, stir the mixture with a fork every 30 minutes to break up any ice crystals until it is fully frozen, typically for about 3-4 hours.

Serving

7

Scoop and Serve

Once the sorbet is fully frozen, scoop it into bowls or cups. Garnish with a fresh mint leaf if desired and serve immediately.
