Prepare the Fries

Start by preheating the oven to 425°F (220°C). Cut the potatoes into thin strips, rinse them under cold water to remove excess starch, and then soak in water for 30 minutes. Drain and pat dry, then toss with olive oil, salt, and pepper. Spread on a baking sheet and bake for 25-30 minutes until crispy.

Cook the Steak

Season the butcher’s cut steak with salt and black pepper on both sides. Preheat a skillet over medium-high heat and add a little oil. Cook the steak for about 4-5 minutes on each side for medium-rare, or until desired doneness. Remove from heat and let rest for 5 minutes.

Char the Onion

While the steak rests, cut the onion into thick slices. In the same skillet, add a bit more oil if needed and char the onion slices until golden brown and soft, about 4-5 minutes on each side.

Prepare the Tomato Salad

Chop the tomatoes into bite-sized pieces and toss with olive oil, salt, and pepper. Let sit for a few minutes to marinate.

Assemble the Dish

Slice the rested steak and place it on a plate. Top with miso butter and serve alongside the charred onions, tomato salad, and hand-cut fries.
