Prepare the Sweet Potatoes

Preheat your oven to 400°F (200°C). Peel the sweet potatoes and cut them into bite-sized cubes. Toss them with 2 tablespoons of olive oil, salt, and black pepper. Spread them on a baking sheet and roast for 25-30 minutes, or until they are tender and lightly caramelized.

Prepare the Chicken

In a small bowl, mix together paprika, garlic powder, cumin, salt, and black pepper. Rub this spice mixture all over the Statler chicken breasts. Heat the remaining 2 tablespoons of olive oil in a grill pan over medium-high heat.

Grill the Chicken

Once the grill pan is hot, add the chicken breasts and grill for 6-7 minutes on each side, or until the internal temperature reaches 165°F (75°C). Add the shishito peppers to the grill pan during the last 5 minutes of cooking, turning occasionally until they are blistered.

Serve

Once cooked, remove the chicken and peppers from the grill. Let the chicken rest for a few minutes before slicing. Serve the grilled Statler chicken breasts with roasted sweet potatoes, blistered shishito peppers, and a generous drizzle of chimichurri sauce.
