Sesame Crusted Ahi Tuna and Accompaniments

Method

Preparation Steps

1

Prepare the Miso Corn Polenta

In a saucepan, bring the water to a boil. Gradually whisk in the cornmeal and miso paste. Reduce the heat to low and cook, stirring frequently, until the polenta thickens (about 15-20 minutes). Season with salt and pepper to taste.

2

Prepare the Vegetables

While the polenta is cooking, slice the Nardello peppers and char them in a hot skillet with a little olive oil until tender. In the same skillet, add the broccolini and sauté until charred and tender. Season with salt and pepper.

3

Crust the Ahi Tuna

Pat the ahi tuna steaks dry with a paper towel. Press each steak into sesame seeds on both sides until well-coated. Heat the remaining olive oil in a skillet over medium-high heat.

4

Cook the Ahi Tuna

Add the sesame-crusted tuna steaks to the skillet and sear for about 1-2 minutes on each side for medium-rare, adjusting the time for desired doneness.

5

Plate the Dish

On each plate, create a bed of miso corn polenta, top with the charred Nardello peppers and broccolini, place the seared tuna on top, and drizzle with mushroom XO sauce.
