Prepare the Asparagus

Trim the ends of the asparagus and blanch them in boiling salted water for 2-3 minutes until tender but still crisp. Drain and set aside.

Cook the Filet Mignon

Season the filet mignon steaks with salt and black pepper. Heat olive oil in a skillet over medium-high heat. Sear the steaks for about 4-5 minutes on each side for medium-rare, or until desired doneness. Remove from heat and let rest for a few minutes.

Assemble the Dish

Place each filet mignon on a plate. Top with lump crab meat and arrange the blanched asparagus beside the steaks. Drizzle hollandaise sauce generously over the crab and steak.
