Prepare the Brussels Sprouts

Preheat your oven to 400°F (200°C). Rinse the Brussels sprouts and trim the ends. Cut them in half lengthwise.

Cook the Bacon

In a skillet over medium heat, cook the bacon until crispy. Remove from the pan and crumble into pieces. Reserve some bacon fat in the skillet.

Sauté the Brussels Sprouts

In the same skillet with the reserved bacon fat, add the Brussels sprouts. Drizzle with olive oil, and season with salt and black pepper. Sauté for about 5-7 minutes until they start to brown.

Glaze the Brussels Sprouts

In a small bowl, mix together honey and chili powder. Drizzle this mixture over the sautéed Brussels sprouts and stir to coat evenly.

Roast the Brussels Sprouts

Transfer the Brussels sprouts to a baking sheet and spread them out in a single layer. Roast in the preheated oven for 15-20 minutes until crispy and caramelized.

Add Bacon and Cheese

Remove from the oven and sprinkle the crumbled bacon and cotija cheese over the top. Serve warm.
