Asparagus with Crispy Prosciutto and Brown Butter Hollandaise

Preparation
Prepare the Asparagus
Trim the woody ends off the asparagus spears and set aside.
Crispy Prosciutto
In a skillet over medium heat, cook the prosciutto until crispy. Remove and drain on paper towels.
Brown Butter
In the same skillet, melt the unsalted butter over medium heat. Continue cooking until it turns golden brown and has a nutty aroma. Remove from heat.
Hollandaise Sauce
In a heatproof bowl, whisk together egg yolks, lemon juice, and water until pale. Place over a pot of simmering water (double boiler) and whisk continuously. Slowly drizzle in the brown butter while whisking until the sauce thickens. Season with salt and black pepper.
Blanch the Asparagus
Bring a pot of salted water to a boil. Add the asparagus and cook for 2-3 minutes until bright green and tender-crisp. Drain and immediately plunge into ice water to stop the cooking.
Serve
Arrange the asparagus on a plate, drizzle with brown butter hollandaise, and top with crispy prosciutto.
