Prepare the Chicken
Preheat your fire-roasting grill to medium-high heat. Rinse the whole chicken under cold water and pat it dry with paper towels.
Season the Chicken
In a small bowl, mix together olive oil, garlic powder, paprika, salt, black pepper, dried oregano, and lemon juice to create a marinade. Rub this mixture all over the chicken, including under the skin for maximum flavor.
Add Fresh Herbs
Place the fresh rosemary inside the cavity of the chicken for additional flavor.
Fire-Roast the Chicken
Place the chicken on the grill, breast side up. Close the lid and roast for about 1.5 to 2 hours, or until the internal temperature reaches 165°F (75°C). Baste with leftover marinade every 30 minutes.
Rest and Serve
Once cooked, remove the chicken from the grill and let it rest for 10-15 minutes before carving. Serve with your choice of sides.
