Preparation Steps
- 1
Prepare the Pork
Rub the pork shoulder generously with Hawaiian sea salt. Let it marinate for at least 2 hours, or preferably overnight in the refrigerator.
- 2
Make the Marinade
In a blender, combine garlic cloves, fresh ginger, soy sauce, rice vinegar, and brown sugar. Blend until smooth.
- 3
Slow Cook the Pork
Place the marinated pork shoulder in a slow cooker. Pour the marinade over the pork and add pineapple chunks. Cook on low for 8 hours or until the pork is tender.
- 4
Prepare Taro Leaves
Wash the taro leaves thoroughly. In a pot, add coconut milk and bring to a simmer. Add the taro leaves and cook until tender, about 15-20 minutes.
- 5
Serve
Shred the pork and serve on Hawaiian bread rolls, topped with chopped green onions. Serve with the cooked taro leaves on the side.
