Shake

Add pear vodka, pear liqueur, fresh lemon juice and simple syrup into a cocktail shaker filled with ice. Secure lid and shake vigorously for 10–12 seconds until well chilled.

Strain

Double-strain the mixture into a chilled coupe or Nick & Nora glass (or a chilled martini glass) to remove ice shards and any pulp.

Top and Garnish

Top gently with the dry sparkling wine (about 2 oz). Express a peel or lightly brush a thin pear slice over the rim and float the slice on the surface as a garnish.

Serve immediately while effervescent.

Optional Pear Syrup

Combine the chopped pear, sugar and water in a small saucepan over medium heat. Stir until sugar dissolves, bring to a gentle simmer, and cook 5–8 minutes until pear is very soft and the syrup is fragrant.

Remove from heat and let cool slightly. Mash the pear into the syrup, then strain through a fine mesh sieve, pressing to extract liquid. Cool completely and refrigerate. Use in place of the simple syrup at a 1:1 volume swap.
