Dry shake

Add gin, raspberry syrup, fresh lemon juice and the egg white to a cocktail shaker (no ice). Seal and shake vigorously for 15–20 seconds. This 'dry shake' emulsifies the egg white and builds a thick, silky foam.

Wet shake

Open the shaker, add ice cubes, reseal and shake hard for another 10–15 seconds until the shaker is very cold (exterior frost) and the mixture is well-chilled.

Strain

Double-strain the cocktail through a fine-mesh strainer into a chilled coupe or Nick & Nora glass to remove ice shards and any raspberry solids for a smooth texture.

Optional vermouth float

If using the optional dry vermouth, gently pour 0.25 oz over the back of a bar spoon onto the surface of the drink to create a thin aromatic layer.

Garnish

Add a small raspberry or a lemon twist to the foam. Finish with 1 dash of Angostura bitters in the center of the foam; you can lightly drag a toothpick through the dash for a simple pattern.

Serve

Serve immediately while the foam is fresh. Sip and enjoy.
