    Cook pasta

    Bring a medium pot of salted water to a boil. Add 2 cups elbow macaroni and cook 1–2 minutes less than package directions so it stays slightly firm (about 6–7 minutes). Drain and rinse under cold water to stop cooking. Shake off excess water and set aside.

    Make cheese sauce

    In the same pot over medium heat, melt 2 tbs unsalted butter. Whisk in 2 tbs all-purpose flour and cook 1–2 minutes, whisking, until slightly golden (this forms a roux). Gradually whisk in 1 cup whole milk and 1/2 cup heavy cream until smooth. Bring to a gentle simmer, whisking, until sauce thickens enough to coat the back of a spoon (2–3 minutes). Remove from heat.

    Finish sauce

    Stir in 2 oz softened cream cheese, 1 tsp Dijon mustard, 1/2 tsp Worcestershire sauce, 1 tsp kosher salt, 1/2 tsp black pepper, and 1/4 tsp smoked paprika until smooth. Fold in 1 cup shredded sharp cheddar and 1 cup shredded gouda in two additions, stirring until melted and smooth. Taste and adjust seasoning. Let sauce cool 5 minutes.

    Combine pasta and sauce

    Fold the drained macaroni into the cheese sauce until fully coated. Spread the mac & cheese into a shallow baking dish or rimmed sheet pan lined with parchment (about 8x8 or similar) in an even layer about 1/2 to 3/4 inch thick. Cover with plastic wrap pressed onto the surface and refrigerate at least 2 hours (preferably 3–4 hours) until firm. Chilling is important so bites hold their shape.

Bacon

    While mac & cheese chills, preheat oven to 400°F (200°C). Line a baking sheet with foil and place a rack on top. Arrange 6 slices thick-cut bacon in a single layer and bake 12–18 minutes until crisp but not burnt (timing depends on thickness). Transfer to paper towels to drain and cool, then chop into small pieces. Reserve.

Forming & Breading

    Once chilled and firm, remove mac & cheese from dish and cut into bite-sized squares or use a small ice cream scoop or 1.5 tablespoon cookie scoop to portion uniform bites (yield ~24–30 bites). If you cut squares, trim edges to get neat shapes.

    Set up a breading station: bowl with 1/2 cup all-purpose flour; bowl with 2 large eggs whisked with 2 tbs milk; bowl with 1.5 cups panko breadcrumbs mixed with 1/4 cup grated Parmesan and 1/2 tsp salt. Press each mac & cheese portion lightly into the chopped bacon so some bacon adheres (or fold bacon into portions prior to chilling if you prefer bacon inside every bite).

    Dredge each portion: coat in flour (shake off excess), dip into egg wash, then press into panko mixture to fully coat. For extra-crispy, double-dip: return to egg and panko again. Place breaded bites on a parchment-lined tray and chill 15–20 minutes to set coating.

Frying

    Heat 2 cups vegetable oil in a heavy skillet or Dutch oven to 350°F (175°C). If you don't have a thermometer, test with a small breadcrumb — it should sizzle and turn golden in ~30 seconds. Work in batches (don't overcrowd) and gently lower chilled bites into oil using a slotted spoon.

    Fry bites 2–3 minutes per side, turning as needed, until golden brown and crisp. Internal cheese should be hot and melty. Use a slotted spoon to transfer to a paper towel-lined tray and season lightly with a pinch of salt while hot. Repeat with remaining batches, allowing oil to return to temperature between batches.

Serve

    Arrange warm mac & cheese bites on a platter. Serve with 3/4 cup ranch dressing for dipping and garnish with chopped chives if desired. Recommend serving immediately so exterior stays crisp and interior remains gooey.
