    Cook pasta

    Bring a large pot of salted water to a boil. Add the pasta and cook 1 minute less than package directions for al dente (about 7-8 minutes). Drain and rinse briefly under hot water to stop cooking; set aside.

    Make roux and béchamel

    In a heavy saucepan set over medium heat, melt 4 tbsp unsalted butter. Add 4 tbsp flour and whisk continuously for 1–2 minutes until a pale roux forms (do not brown). Slowly whisk in 3 cups whole milk and 1 cup heavy cream, bringing mixture to a gentle simmer. Continue whisking until sauce thickens and coats the back of a spoon, about 4–6 minutes.

    Finish cheese sauce

    Reduce heat to low. Whisk in the 4 oz softened cream cheese until smooth. Add Dijon, Worcestershire, 1 tsp kosher salt, 1 tsp black pepper and a pinch of nutmeg. Stir in 2 cups grated cheddar and 2 cups grated smoked Gouda in batches until fully melted and smooth. Taste and adjust seasoning.

    Combine with pasta

    Fold the cooked, drained pasta into the cheese sauce until evenly coated. Remove from heat and let cool slightly for 10 minutes to allow the mixture to thicken (this helps form shapes).

Forming & Filling

    Assemble portions

    Line a baking sheet with parchment and lightly oil or spray. Using a 2.5–3 inch round scoop or a measuring cup, portion heaping 1/3 cup to 1/2 cup amounts of mac & cheese (about golf-ball to small cookie size). Press each portion gently in your palm to compact and create a flat-bottomed disk. If you like an extra gooey center, press a small amount (about 1 teaspoon) of shredded smoked Gouda into the center and fold mac over to seal. Place formed portions on prepared sheet. Chill in refrigerator for at least 30 minutes or up to 2 hours to firm (this prevents falling apart while frying).

Coating & Frying

    Prepare dredging stations

    Place 1 cup flour in a shallow dish. In a second shallow bowl whisk together 3 eggs and 2 tbsp milk. In a third bowl combine 2 cups panko, 1 cup grated Parmesan, 1 tsp garlic powder, 1 tsp smoked paprika, and 2 tbsp chopped parsley.

    Dredge mac bites

    Working with chilled mac portions, dredge each piece first in flour, shaking off excess, then dip into the egg wash, letting excess drip, then press into the panko-Parmesan mixture, coating fully. For an extra-crispy double coating, repeat the egg and panko step once more. Place coated bites back on the tray and chill 10 minutes to set the breading.

    Fry the bites

    Pour about 1"–1.5" of vegetable oil into a heavy skillet (cast-iron or stainless) and heat to 350°F (175°C). If you don't have a thermometer, test with a small breadcrumb—it should sizzle and turn golden in ~30 seconds. Fry the mac bites in batches (do not overcrowd) for 2–3 minutes per side, turning gently with tongs or a slotted spoon, until deeply golden and crisp. Internal center should be hot and cheese melted. Drain on a wire rack set over a baking sheet lined with paper towels. If oil temperature drops below 320°F, let it recover between batches.

    Baking alternative (optional)

    For a lower-fat option, preheat oven to 425°F (220°C). Place coated bites on a parchment-lined sheet, spray lightly with cooking spray, and bake 12–15 minutes, flipping once halfway, until golden and crisp.

Finish & Serve

    Transfer fried Gouda mac & cheese bites to a serving platter. Sprinkle with remaining 4 oz shredded smoked Gouda (it will melt slightly from residual heat) and chopped chives or parsley. Finish with a crack of black pepper.
