Prepare Dough / Oven

    Preheat and oil pan

    Position an oven rack in the top third and preheat oven to 500°F (260°C) for at least 30 minutes (use a pizza stone if you have one). Lightly brush a pizza pan or baking sheet with 1 tablespoon olive oil.

    If using refrigerated dough, bring it to room temperature for 20–30 minutes so it's easier to stretch.

Prepare Sauce & Toppings

    Make the BBQ sauce

    In a small bowl combine 3 tablespoons barbecue sauce, 1 teaspoon smoked paprika, and 1 teaspoon hot sauce (if using). Mix until smooth. This yields a smoky-spicy BBQ sauce to coat the base.

    Prep vegetables and chicken

    Thinly slice 1/2 cup red onion (about half a medium onion) and 1 cup mushrooms. If using cooked shredded chicken, warm and toss lightly with 1 tablespoon of the prepared BBQ sauce so it blends with the pizza flavor. Season the mushrooms and onions with 1/2 teaspoon salt and 1/4 teaspoon black pepper.

Assemble Pizza

    Stretch or roll the dough on a lightly floured surface to a 12-inch round (or shape to your pan). Transfer the dough to the oiled pan or preheated pizza stone (use parchment to transfer if needed).

    Evenly spread the BBQ sauce mixture over the dough, leaving a 1/2-inch border for the crust.

    Distribute the warmed, sauced shredded chicken evenly over the sauce (if using). Scatter the seasoned sliced mushrooms and red onion across the pizza.

    Tear or slice 8 oz fresh mozzarella and distribute pieces evenly so there are no large gaps. If using, sprinkle 2 tablespoons grated Parmesan over the top.

Bake & Finish

    Slide the pizza into the preheated oven (onto the stone or middle rack). Bake 8–12 minutes until the crust is golden and crisp and the mozzarella is melted and slightly browned in spots. Baking time will vary by oven and thickness of dough.

    Remove pizza from oven. Drizzle 1 teaspoon extra-virgin olive oil over the top and sprinkle 2 tablespoons chopped cilantro or parsley and 1/4 teaspoon red pepper flakes if using.

    Let rest 2–3 minutes, slice into 6–8 pieces and serve warm.
