Macerate raspberries

Place the 6 fresh raspberries in a cocktail shaker or mixing glass. Add the simple syrup and muddle gently until berries are broken down and release their juices (about 20–30 seconds).

Add primary ingredients

To the muddled raspberries add the gin, raspberry liqueur, fresh lemon juice, and egg white (if using). Do not add ice yet.

Dry shake

Seal the shaker and perform a vigorous dry shake (no ice) for 10–15 seconds to emulsify the egg white and incorporate the raspberry puree, producing a silky foam.

Shake with ice

Add ice to the shaker (about 1 cup) and shake vigorously for 10–15 seconds until well chilled. This chills and dilutes the cocktail to the correct level.

Double strain

Double-strain the cocktail into a chilled coupe or Nick & Nora glass using a Hawthorne strainer and a fine mesh strainer to remove seeds and solids, leaving a smooth pink-red liquid with a light foam on top.

Top and finish

Gently top the drink with 1.5 oz dry sparkling wine (or club soda for a lower-alcohol version) to add lift. Allow the foam to settle slightly.

Thread the fresh raspberry on a cocktail pick and rest it across the rim or float it on the foam. Express the lemon twist over the drink to release oils, then drop the twist on top.
