Sauté aromatics

Heat 1 tablespoon olive oil and 1 tablespoon butter in a large skillet over medium heat. Add the finely diced onion and celery and sauté, stirring occasionally, until soft and translucent, about 6–8 minutes. Add the minced garlic and cook 30 seconds until fragrant. Remove from heat and let cool slightly.

Brown meats

In the same skillet or a separate pan, add the pork sausage meat and ground turkey and cook over medium-high heat until no pink remains, breaking up the meat with a spoon, about 6–8 minutes. Drain any excess fat if necessary and return to low heat.

Combine stuffing components

To a large mixing bowl, add the browned meats, sautéed aromatics, chopped sage, chopped parsley, breadcrumbs, beaten egg, chicken/turkey stock, salt, black pepper, and optional nutmeg. Mix thoroughly with a wooden spoon or your hands until evenly combined and moist but not runny. If the mixture seems dry, add up to 2 tablespoons more stock; if too wet, add a few tablespoons more breadcrumbs.

Cook or cool stuffing

For a quick hot filling: form the mixture into 8 equal patties (about 100 g each) and pan-fry in 1 tablespoon butter over medium heat 4–5 minutes per side until internal temperature reaches 74°C (165°F) and patties are browned. Or to keep it classic and use as a cold spread: spread the mixture into a shallow baking dish, cover, and refrigerate for at least 30 minutes to firm up. You may also bake at 180°C (350°F) for 20–25 minutes until set and golden if you prefer a baked stuffing.

Prepare cranberry spread

In a small bowl, stir together the cranberry sauce, whole-grain mustard, and mayonnaise (if using) until smooth and slightly loosened. Taste and adjust: add a pinch of salt or a squeeze of lemon if desired.

Toast bread

Butter one side of each bread slice or roll halves. Heat a griddle or skillet over medium heat and toast the buttered sides until golden brown, about 2–3 minutes per side. Alternatively, use a toaster and brush melted butter after toasting.

Assemble sandwiches

If you made patties, place one warm sausage-turkey patty on the bottom slice of each toasted bread. If using chilled/baked stuffing, spread about 1/3 to 1/2 cup of the stuffing mixture onto each bottom slice. Top stuffing with a thin layer of the cranberry spread, a slice of tomato, a few leaves of lettuce, and optional red onion slices. Add the top slice of bread and press gently.

Finish and serve

Slice sandwiches in half if desired. Serve immediately while patties are warm, or wrap for transport. Leftover stuffing keeps in the refrigerator for 3 days; reheat patties gently in a skillet or oven before assembling.
