Chill glass

Place a coupe or martini glass in the freezer or fill it with ice water while you build the cocktail to ensure the glass is well chilled.

Mix

Add 2 oz Monkey 47 dry gin, 0.5 oz fresh lemon juice, 0.5 oz simple syrup, and 2 dashes orange bitters into a cocktail shaker.

Fill the shaker with ice (enough to come about three-quarters full).

Shake vigorously for 12–15 seconds until the shaker is very cold and nicely aerated.

Discard ice or water from the chilled glass and double-strain the cocktail into the chilled coupe/martini glass using a hawthorne and fine mesh strainer to remove small ice shards and any pulp.

Express the oils of a lemon twist over the drink by holding the twist skin-side down about 3 inches above the surface and giving it a quick squeeze away from you; then either drop the twist into the drink or rub it on the rim and rest it on the edge.

Optionally, slap the rosemary sprig between your palms to release aroma and rest it in the glass as a fragrant garnish.
