Prepare glass

Chill an Old Fashioned or rocks glass by filling it with ice and setting aside while you build the drink.

Build and shake

Discard the ice from the chilled glass. In a cocktail shaker add 2 oz Captain Morgan Original Spiced Rum, 0.5 oz fresh lime juice, 0.5 oz demerara (dark brown) simple syrup, and 2 dashes of Angostura bitters. Fill the shaker with ice (enough to nearly fill) and shake vigorously for 10–12 seconds until well chilled and slightly diluted.

Strain

Double-strain (or fine-strain) the cocktail into the chilled rocks glass over one large ice cube or a couple of large cubes.

Optional float

For extra depth, gently pour 0.25 oz aged dark rum over the back of a spoon to float on top of the cocktail.

Express citrus oil

Take an orange peel, hold it over the drink skin side down and give it a good sharp twist toward the surface to spray the citrus oils over the cocktail. Run the peel around the glass rim and drop it in or discard per preference.

Garnish & Finish

Garnish with a lime wheel or wedge on the rim. Optionally grate a very small pinch of fresh nutmeg or dust of cinnamon over the top for warm aromatic notes. Serve immediately.
