Prepare glass

Fill a highball or Collins glass with ice to chill while you build the cocktail.

Combine ingredients

Add Bombay Sapphire gin (2 oz), fresh lime juice (0.75 oz) and simple syrup (0.5 oz) to a cocktail shaker.

Add ice and shake

Add 4 ice cubes to the shaker, secure the lid and shake vigorously for 10–12 seconds until the outside of the shaker is frosty and the ingredients are well chilled and diluted.

Strain and top

Discard ice from the chilled glass, then double-strain the shaken mixture into the glass over fresh ice. Top with approximately 2 oz club soda to add effervescence and gentle dilution.

Garnish and serve

Gently stir once or twice to combine. Garnish with a lime wheel on the rim or floated on top. Serve immediately.

Use the jigger to measure spirits and mixers accurately. Use the Hawthorne strainer when pouring from the shaker to keep ice shards out of the finished drink.
