Prepare the Broth

In a large pot, combine the cubed grass-fed beef, water (or beef broth), bay leaves, salt, and pepper. Bring to a boil, then reduce heat and let simmer for about 1 hour until the beef is tender.

Add Vegetables

Once the beef is tender, add the chopped onion, sliced carrots, diced potatoes, and grated red beets to the pot. Stir well and let simmer for an additional 30 minutes.

Finish and Serve

Remove the bay leaves, stir in the fresh dill, and adjust seasoning if necessary. Serve the borscht hot, topped with a spoonful of sour cream and additional fresh herbs if desired.
