Prepare ribs
Preheat oven to 275°F (135°C). Remove ribs from packaging and pat dry with paper towels. If the membrane (silvery skin) is still on the bone side, slide a thin knife under one end, grab the membrane with a paper towel and peel it off.

Make dry rub and marinate
In a small bowl combine kosher salt, black pepper, smoked paprika, ground cumin, garlic powder and onion powder. Stir in olive oil and 2 tablespoons apple cider vinegar to form a paste. Rub paste evenly over both sides of the ribs, coating thoroughly. Place ribs on a rimmed baking sheet or in a roasting pan, meat side up. Cover tightly with foil and refrigerate for at least 1 hour or up to overnight for deeper flavor. If short on time, let sit at room temperature 30 minutes before cooking.

Slow-cook in oven
Remove ribs from refrigerator 30 minutes before cooking. Keep oven at 275°F (135°C). Place the foil-covered ribs in the oven and roast for 2 to 2 1/2 hours, or until the meat is very tender and pulls back from the bone about 1/4 to 1/2 inch. Check after 2 hours; if not tender, continue to 2 1/2 hours.

Prepare glaze
While ribs roast for the last 30 minutes, make the sauce. In a small saucepan combine ketchup, brown sugar, Worcestershire sauce, honey, minced chipotle, 1 tablespoon apple cider vinegar, salt and pepper. Warm over medium-low heat, stirring until sugar dissolves and sauce is glossy, about 5 minutes. Taste and adjust heat or acidity to preference. Keep warm.

Glaze and finish
When ribs are tender, remove from oven and increase oven temperature to 425°F (220°C) or preheat a grill for medium-high. Uncover ribs, brush a generous layer of the warm glaze over the meat side. Return to oven on a baking sheet (or place on the grill) and cook 8–10 minutes until glaze is bubbling and caramelized; watch carefully to avoid burning. Flip ribs and brush more glaze on the bone side for 1–2 minutes if desired for color.

Rest and garnish: Remove ribs from oven or grill and let rest 5 minutes. Sprinkle chopped cilantro over the ribs and serve with lime wedges for squeezing. Slice between bones into individual portions. Offer optional hot sauce/adobo at the table.
