Form Patties

Divide the 8 oz brisket/short rib blend into two equal 4 oz portions and gently form each into a 3 1/2–4" diameter patty about 1/2" thick. Avoid overworking the meat. Make a slight dimple in the center of each patty with your thumb to prevent dome-up while cooking.

Season

Season both sides of each patty evenly with 1/2 tsp kosher salt and 1/2 tsp coarse black pepper (total listed under ingredients).

Cook Patties

Heat a cast-iron skillet or griddle over medium-high heat and add 1 tablespoon neutral oil. When shimmering, add the patties. Cook undisturbed 3–3 1/2 minutes to form a crust. Flip and cook 2–3 minutes for medium (adjust +/- for desired doneness). During the last 30–45 seconds of cooking, place a slice of sharp cheddar on each patty and cover the pan briefly to melt the cheese.

Cheese & Toppings

Cook Bacon

While the patties cook, place the 2 slices of bacon in a separate skillet over medium heat. Cook until crisp to your liking, about 6–8 minutes, turning occasionally. Transfer to a paper towel-lined plate to drain and keep warm.

Prepare Produce

Thinly shave the red onion so you have approximately 1/4 cup. Wash and dry 2 leaves of Salad Days lettuce. Slice two 1/4" tomato rounds and keep them ready for assembly.

Buns & Assembly

Toast Buns

Butter the cut sides of the bun lightly (about 1 tsp total). Toast buttered sides on a skillet or griddle over medium heat until golden, about 1–2 minutes.

Spread Condiments

On the bottom bun spread 1 tablespoon mayonnaise. On the top bun spread 1 teaspoon yellow mustard. (Quantities listed under ingredients.)

Assemble Burger

Place a leaf of Salad Days lettuce on the mayo-coated bottom bun. Add the first cheddar-topped patty, then the second cheddar-topped patty stacked on top. Layer the two bacon strips over the patties, then add the shaved onion and two tomato slices. Cap with the mustard-spread top bun.

Serve

Serve immediately while the patties are hot and cheese is melty. If desired, secure with a toothpick and serve with fries or your preferred side.
