Prepare chips

Preheat oven to 350°F (175°C). Spread 6 cups of corn chips in an even layer on a rimmed sheet pan or in a large shallow baking dish (or several small cans/buckets if serving in cans).

Scatter 1 cup warmed black beans evenly over the chips, leaving some chips visible for crisp texture.

Evenly distribute 2 cups chopped warmed brisket across the chips and beans. Set pan aside while you make the cheese sauce.

Jack cheese sauce

Make a roux

In a medium saucepan over medium heat, melt 2 tbs unsalted butter. Once foamy, add 2 tbs all-purpose flour and whisk constantly for 1–1½ minutes until the mixture is pale golden and has a slightly nutty aroma (this cooks out the raw flour flavor).

Add milk

Slowly pour in 1 cup whole milk while whisking to avoid lumps. Continue to whisk and bring the mixture to a gentle simmer; cook 2–3 minutes until the mixture thickens into a smooth bechamel consistency.

Finish sauce

Lower heat to low. Stir in 1 cup grated sharp white cheddar and 1 cup grated pepper jack a handful at a time, whisking until fully melted and smooth. Season with 1 tsp salt, 1 tsp ground black pepper, 1/2 tsp ground cumin, and 1 tsp hot sauce (optional). Keep sauce warm on the lowest heat, stirring occasionally to prevent skin from forming.

If sauce becomes too thick, whisk in up to 1–2 tbs additional milk to reach a pourable consistency.

Pour or ladle the warm jack cheese sauce evenly over the chips, brisket, and beans on the prepared pan so chips are well-coated but not soggy.

Pickled jalapeño & pico

Make pico de gallo

In a medium bowl combine 1 cup small-diced tomato, 1/4 cup finely diced red onion, 2 tbs chopped cilantro, 1 tbs fresh lime juice and 1/2 tsp kosher salt. Mix gently and taste; adjust salt or lime if needed.

Drain excess liquid from 1/2 cup pickled jalapeño slices if they are very briny; pat dry and roughly chop larger slices if desired.

Scatter the pico and pickled jalapeño slices evenly over the sauced nachos. Use more jalapeño on half the tray if you want to offer a milder option.

Finishes & Garnish

Place the pan in the preheated 350°F (175°C) oven for 6–8 minutes to warm everything through and lightly meld flavors. Watch carefully so chips do not brown further.

Remove from oven. Dollop 1/2 cup sour cream across the nachos in spoonfuls or transfer to a squeeze bottle and drizzle as ribbons.

Sprinkle 2 tbs chopped green onion and 2 tbs fresh cilantro leaves over the top. Serve immediately with lime wedges on the side for squeezing over each portion.

If serving in individual cans or small containers, portion chips into cans first, layer beans and brisket, ladle cheese sauce, then finish with pico, pickled jalapeños, sour cream and garnish.
