Method
PREP & RIM
Prepare glass
Choose a rocks or coupe glass. Run a lime wedge around the rim to moisten it. Spread the coarse or smoked salt on a small plate and press the rim into the salt to coat evenly. Set glass aside.
If using crushed ice, crush and chill ahead of assembling the cocktail.
MIX & SHAKE
Combine ingredients
In a cocktail shaker, add 2 oz Lyre’s Agave, 2 oz house tepache (strained to remove solids), 1 oz fresh lime juice, 0.5 oz agave syrup, and 0.5 oz orange liqueur alternative. Add a handful of ice (enough to chill well).
Shake
Secure the shaker and shake vigorously for 10–15 seconds until the outside of the shaker is frosty and the mixture is well chilled and slightly diluted.
STRAIN & GARNISH
Strain
Fill the prepared glass with fresh ice (cubes or crushed). Double-strain the mixture from the shaker into the glass using a Hawthorne and fine strainer to catch any pulp or ice shards.
Garnish
Express a lime peel over the drink and drop a lime wheel or wedge onto the rim. Add a pineapple leaf or a thin pineapple slice for an aromatic visual flourish if desired.
Serve immediately with a short straw or stirring pick. Optionally offer extra house tepache on the side for a brighter top-up.
