Fresh oysters

Clean oysters

Rinse the oysters under cold running water, scrubbing the shells with a stiff brush to remove dirt and barnacles. Discard any shells that are cracked or open and do not close when tapped.

Shuck oysters (if serving raw)

Place an oyster cupped-side down on a towel with the hinge toward you. Hold firmly. Insert an oyster knife into the hinge, twist gently until it pops. Slide the blade along the top shell to cut the muscle, remove top shell, and carefully slide the blade under the oyster to sever the bottom muscle, leaving the oyster in the deep half shell. Collect and discard any shell fragments. Keep oysters level so they retain their liquor.

Arrange on ice

Spread crushed ice on a serving platter (or pack a shallow bowl). Optionally sprinkle a layer of sea salt to stabilize shells. Nestle the shucked oysters on the ice so they sit level and cold. Keep refrigerated until ready to serve, up to 2 hours.

Mignonette

In a small bowl combine champagne vinegar, finely minced shallot, freshly ground black pepper, sea salt, and chopped chives. Stir and let rest at least 10 minutes so flavors meld. Taste and adjust vinegar or salt as desired. Chill until serving.

Citrus & hot sauce

Cut lemons and limes into wedges. Place wedges and hot sauce in small bowls on the serving platter so guests can squeeze citrus or add a dash of heat to each oyster to taste.

Compound butter (optional, for grilled/broiled oysters)

If you prefer warm oysters, combine softened butter, grated garlic, chopped parsley, lemon zest, sea salt and black pepper in a bowl. Mix until smooth. Place a small spoonful (about 1/2 tsp) on each shucked oyster. Heat under a hot broiler set 4–6 inches from heat for 3–5 minutes until butter is bubbly and edges of oyster curl slightly; alternatively grill over medium-high heat until butter melts and edges curl. Serve immediately on the hot half shells on a bed of ice for presentation.

Finishing & service

To serve raw oysters: Offer a small spoon of mignonette and lemon and lime wedges alongside hot sauce. Encourage guests to tip the oyster liquor and a touch of mignonette or a squeeze of lemon into their mouth and slurp the oyster in one bite.

Storage and safety: Keep oysters chilled on ice while serving and consume within 2 hours of shucking. Use only oysters that smell fresh and briny (not fishy). Leftover shucked oysters may be refrigerated tightly covered and used within 24 hours; cooked oysters keep 2–3 days.
