Prepare lobster

If lobster tails are frozen, thaw overnight in refrigerator. Using kitchen shears, cut the top shell lengthwise down the middle and gently pry shell open. Loosen the meat from the shell keeping the tail meat attached at the base; lift meat up and over the shell so it rests on top (butterfly). Pat meat dry with paper towels. Trim any dark vein or cartilage.

Season & set up dredging stations

In a shallow bowl whisk together flour, cornstarch, 1 tsp Kosher salt, 1/4 tsp black pepper, and smoked paprika. In a second bowl whisk eggs with milk until smooth. In a third shallow bowl place panko breadcrumbs. Reserve a small plate for finished pieces.

Dredge lobster

Working one tail at a time, lightly dust lobster meat with the flour mixture, shake off excess, dip into the egg wash making sure it's fully coated, then press into panko to evenly coat. For extra crispness, repeat the egg and panko step for a double crust. Place on a wire rack and rest 5 minutes so the coating adheres.

Heat oil & fry

Pour vegetable oil into a deep skillet or pot to a depth of about 1.5" and heat to 350°F (175°C). If you don't have a thermometer, oil should shimmer and a pinch of bread will brown in ~45–60 seconds. Fry lobster tails in batches (do not overcrowd) 2–3 minutes per side until golden brown and cooked through (internal temp ~140–145°F, meat opaque and firm). Transfer to a wire rack set over a baking sheet to drain.

Finish

Brush fried lobster lightly with melted butter and sprinkle a pinch of remaining 1/2 tsp Kosher salt if desired. Keep warm in a low oven (200°F/95°C) while finishing remaining components.

Tabasco Aioli

In a small bowl combine mayonnaise, sour cream, lemon juice, Tabasco, Dijon mustard, minced garlic, celery seed (if using), 1/4 tsp Kosher salt, and 1/8 tsp black pepper. Whisk until smooth and taste; adjust Tabasco for heat and lemon for brightness. Chill in refrigerator for at least 15 minutes to let flavors marry.

Rolls & Salad

Prepare rolls

Halve the brioche rolls lengthwise. Spread softened butter on the cut sides. Heat a skillet over medium heat and toast the buttered sides until golden brown and crisp, about 1–2 minutes per side. Remove and keep warm.

Prep lettuce & tomato

Tear or arrange 2 leaves of lettuce per roll so they fit comfortably inside. Slice the tomato into thin rounds and lightly season with a pinch of flaky sea salt.

Assemble lobster rolls

Spread 1–1.5 tablespoons of Tabasco aioli on the bottom half of each toasted roll. Place lettuce inside the roll, then 1–2 tomato slices. Break each fried lobster tail into 2–3 bite-sized pieces (or leave whole for a dramatic presentation) and arrange over the lettuce/tomato. Drizzle a little extra aioli over the lobster if desired, sprinkle with chopped chives, and finish with a light pinch of flaky sea salt and a squeeze of lemon. Close gently with top half of roll and serve immediately with lemon wedge.
