Blueberry Margarita

Prepare glass

Run a lime wedge around the rim of a chilled rocks or margarita glass. Dip the rim into coarse salt or sugar to coat. Set aside.

Muddle blueberries

In a cocktail shaker, add 8 fresh blueberries and the simple syrup (0.25 oz). Muddle firmly until the berries are broken down and release their juice (about 20–30 seconds).

Combine and shake

Add 2 oz blanco tequila, 0.5 oz blueberry liqueur (or blueberry syrup), 1 oz fresh lime juice, 0.5 oz triple sec, and 6 oz of ice to the shaker. Shake vigorously for 12–15 seconds until well-chilled and slightly frothy.

Strain and serve

Double-strain the cocktail into the prepared glass over fresh ice (use a fine mesh strainer to catch berry solids). Garnish with 3–4 fresh blueberries skewered or dropped into the drink and a lime wedge. Serve immediately.

Mango Margarita

Rub a lime wedge around the rim of a chilled rocks or margarita glass and dip into coarse salt or Tajín. Set aside.

Combine and shake

In a cocktail shaker add 2 oz blanco tequila, 1 oz mango puree, 1 oz fresh lime juice, 0.5 oz triple sec, 0.5 oz agave nectar (or simple syrup), and 6 oz ice. Shake vigorously for 12–15 seconds until the mixture is cold and the puree is well incorporated.

Strain and serve

Strain into the prepared glass over fresh ice. If the puree has pulp, use a fine mesh strainer for a smoother texture. Garnish with a mango slice and a lime wedge. Serve immediately.

Prickly Pear Margarita

Moisten the rim of a chilled rocks or margarita glass with a lime wedge; dip into coarse salt or sugar. Set aside.

In a cocktail shaker combine 2 oz blanco tequila, 1 oz prickly pear syrup (or puree), 1 oz fresh lime juice, 0.5 oz triple sec, 0.25 oz agave nectar (only if the prickly pear syrup is unsweetened), and 6 oz ice. Shake vigorously for 12–15 seconds until well-chilled and slightly diluted.

Strain and serve

Double-strain into the prepared glass over fresh ice to remove any seeds or pulp. Garnish with a lime wheel and a lime wedge. Serve immediately.
