Method
Dough
In a large bowl, combine 2 cups all-purpose flour and 1/2 tsp salt. Make a well in the center.
Add 3/4 cup warm water and 1 tbsp vegetable oil gradually, mixing with your hand or a spoon until a shaggy dough forms.
Knead on a lightly floured surface for 6–8 minutes until smooth and elastic. Cover with a damp cloth and rest for at least 30 minutes while you prepare fillings.
Mustang (spicy pork-style) filling
Add 2 tsp minced garlic, 1 tsp minced ginger and 1 finely chopped green chili; cook 30–45 seconds until fragrant.
Add 0.5 lb ground pork (or chicken) and cook, breaking up lumps, until no longer pink, about 5–6 minutes.
Stir in 1 tbsp soy sauce, 1 tsp red chili paste, 2 tbsp chopped coriander, 1/2 tsp salt and 1/4 tsp white pepper. Cook another 1–2 minutes to combine. Remove from heat and cool to room temperature before assembling.
Tandoori filling (tandoori-spiced chicken)
In a bowl, combine 0.5 lb ground chicken with 2 tbsp thick yogurt, 1 tbsp tandoori masala, 1 tsp ginger-garlic paste, 1 tbsp lemon juice, 1/2 tsp salt and 1 tsp oil.
Mix until evenly seasoned. Optionally sear the mixture in a hot pan for 3–4 minutes to lightly cook and deepen flavor, then cool before using. Alternatively use raw if steaming thoroughly later.
Steamed (vegetable) filling
Squeeze to remove excess moisture from the vegetables (use a towel or press with a spoon). Keep mixture slightly moist but not watery; cool before assembling.
Fried filling (schezwan-style)
Add 0.5 lb ground meat and cook until browned, 5–6 minutes. Add 1/2 cup finely diced bell pepper and cook 2 minutes to soften.
Stir in 1 tbsp schezwan sauce, 1 tsp soy sauce and 1/4 tsp salt. Cook another minute. Remove from heat and let cool before using.
Afghani filling (creamy mild)
Add 0.5 lb minced chicken and cook until just done, 5–6 minutes. Stir in 2 tbsp cream (or thick yogurt), 1/2 tsp garam masala, 1/2 tsp coriander powder and 1/2 tsp salt. Cook 1–2 minutes more, then cool.
Assembly & cooking (common steps for all styles)
Lightly flour your work surface. Divide rested dough into 24 equal pieces (about 1-inch balls). Keep covered to prevent drying.
Roll each ball into a 3–4 inch round wrapper, thinner at edges and slightly thicker in center.
Place about 1 to 1.5 tsp (approx. 10–12 g) of the chosen filling in the center of a wrapper. Do not overfill — leave space to seal.
Moisten the wrapper edge with a little water. Fold and pleat to seal (classic momo pleat, half-moon or round pouch). Ensure there are no gaps.
Steaming (for Steamed and Tandoori/Afghani if using raw filling)
Arrange momos in a steamer lined with parchment or cabbage leaves, leaving space between. Steam over rolling water for 10–12 minutes for raw meat fillings (12–14 minutes for larger), 8–10 minutes for vegetable momos. Remove carefully.
Pan-frying (potsticker-style, for Fried and optionally Mustang)
Heat a nonstick pan over medium heat with 1 tbsp oil. Place momos in a single layer and fry until bottoms are golden, about 2–3 minutes. Add 1/4 cup water, cover immediately and steam for 5–6 minutes until water evaporates and wrappers are cooked. Uncover and crisp bottoms 1 minute more. Remove.
Deep-frying (for Crispy Fried option)
Heat oil in a deep pan to 180°C (350°F). Fry momos in batches until golden brown and crisp, about 3–4 minutes. Drain on paper towels.
