Prepare vegetables
Wash and chop cauliflower into bite-sized florets. Halve or quarter baby potatoes so pieces are roughly the same size as cauliflower. Cut bell peppers into 1-inch pieces and slice carrot into 1/4-inch coins. Measure out frozen peas and set aside to thaw slightly.
Marinade
Make marinade
In a bowl, combine yogurt, ginger-garlic paste, garam masala, ground coriander, ground cumin, turmeric, red chili powder, salt, and lemon juice. Whisk until smooth.
For Roasting/Grilling Vegetables
Roast or grill
Preheat oven to 425°F (220°C) or heat a grill or grill pan. Toss the marinated vegetables with 2 tablespoons vegetable oil, 1/2 tsp salt and 1/4 tsp black pepper. Spread in a single layer on a rimmed baking sheet (use two if crowded). Roast 20–25 minutes, turning once, until edges are charred and vegetables are tender. If grilling, cook over medium-high heat 10–15 minutes, turning occasionally, until lightly charred. Remove and set aside.
Sauce
Start the sauce
Heat 2 tablespoons oil and 1 tablespoon butter in a large skillet or saucepan over medium heat. Add bay leaf and cumin seeds; when seeds sizzle (about 30 seconds), add finely chopped onion. Cook, stirring occasionally, until onions are soft and golden, 8–10 minutes.
Add aromatics and spices
Stir in 1 tablespoon ginger-garlic paste and cook 1 minute more. Add 2 teaspoons ground coriander, 1 teaspoon ground cumin, and 1 teaspoon red chili powder; toast the spices 30–45 seconds until fragrant.
Incorporate tomatoes
Pour in 2 cups tomato puree and 1/2 cup water or vegetable stock. Bring to a simmer, reduce heat to low, and cook, stirring occasionally, 10–12 minutes to reduce slightly and deepen flavor.
Finish the sauce
Stir in 1/2 cup cashew paste (or heavy cream) until fully incorporated. Simmer another 3–5 minutes. Taste and add 1 teaspoon salt and 1/2 teaspoon sugar or honey if needed to balance acidity. Crush and sprinkle 1 teaspoon dried fenugreek leaves into the sauce and stir.
Combine & Finish
Combine vegetables with sauce
Add the roasted/grilled vegetables to the simmering sauce and gently fold to coat. If sauce is too thick, add 2–4 tablespoons water and simmer 3–4 minutes until vegetables are heated through and flavors meld.
