Rinse and soak
Rinse 1.5 cups dal under running water until the water runs mostly clear. Optional: soak the dal in water for 20–30 minutes to reduce cooking time and improve texture; drain before cooking.
Cook the dal
Combine the rinsed dal and 4 cups water in a medium saucepan or pressure cooker. Add 1/2 tsp turmeric. If using a pressure cooker, cook on medium-high until 3–4 whistles (about 12–15 minutes total) then reduce heat and let release naturally for 5–10 minutes. If using a saucepan, bring to a boil, skim any foam, then reduce heat and simmer partially covered until dal is soft and breaking down (25–35 minutes), stirring occasionally and adding more water if it becomes too thick.
Mash and season
Once tender, mash the dal lightly with the back of a spoon or whisk to reach a slightly creamy consistency but still with some texture. Add 1 tsp salt, the chopped tomato (1 cup) and slit green chili. Simmer 5–7 minutes so the tomato softens and the flavors meld. Adjust consistency with up to 1/2–1 cup additional hot water to reach preferred thickness (typical tadka dal is pourable but not watery). Taste and adjust salt.
Finish with cilantro
Stir in 1/4 cup chopped cilantro and 1 tsp lemon juice. Keep the dal hot while you prepare the tempering (tadka).
Tadka / Tempering
Heat fat and seeds
In a small heavy-bottomed pan or tadka pan, warm 3 tablespoons ghee or oil over medium heat until shimmering but not smoking. Add 1 tsp cumin seeds and 1/2 tsp mustard seeds (if using). Let the seeds sizzle and pop for about 10–20 seconds. Immediately add 1/8 tsp asafoetida and 2 broken dried red chilies, stirring once so they don't burn.
Sauté aromatics
Reduce heat to medium-low. Add 4 thinly sliced garlic cloves and sauté until they are golden-brown at the edges (about 45–60 seconds). Add 1 tablespoon minced ginger and 1/2 cup finely chopped onion. Sauté until the onion is softened and starting to brown, about 2–3 minutes, stirring so garlic doesn't burn.
Add spices
Stir in 1/2 tsp red chili powder and 1/4 tsp ground cumin (if using). Cook for 20–30 seconds to bloom the spices, releasing their aroma. Taste and adjust heat by adding a pinch more chili powder if desired.
Combine tadka with dal
Carefully pour the hot tempering over the simmering dal. It will sizzle and release a burst of aroma. Stir the dal gently to incorporate the tadka evenly. Simmer together for 1–2 minutes so flavors marry.
Final seasoning
Taste and adjust salt and acidity. Add another 1/2 tsp lemon juice if you prefer a brighter finish. Garnish with additional chopped cilantro if desired and serve immediately.
