Rinse and soak (optional)

Place the basmati rice in a fine-mesh sieve and rinse under cold running water until the water runs clear to remove excess surface starch. Optionally, transfer rice to a bowl, cover with cool water and soak 20–30 minutes—this yields fluffier, separate grains. Drain thoroughly.

Measure 2 1/4 cups water for 1 1/2 cups rice. If you soaked the rice, reduce water to 2 cups.

Toast cumin and whole spices

Heat a medium heavy-bottomed saucepan with a tight-fitting lid over medium heat. Add the vegetable oil or ghee and warm until shimmering. Add the cumin seeds and whole black peppercorns and cook, stirring, 30–45 seconds until cumin becomes fragrant and just begins to darken — take care not to burn them.

Sauté onion and garlic

Add the finely chopped onion and a pinch of salt to the pan. Sauté 4–6 minutes until the onion is soft and starting to turn translucent and edges just begin to brown. Stir in the minced garlic and cook 30–45 seconds until fragrant.

Add spices

Lower heat to medium-low and stir in the bay leaf, ground turmeric and ground coriander (if using). Cook 20–30 seconds to bloom the spices, stirring so they don't stick.

Add the drained rice to the saucepan and gently stir for 1–2 minutes, coating the grains with the spiced oil and warming them through. This helps keep grains separate and adds flavor.

Cooking & Finish

Add liquid and simmer

Pour in the measured water and add 1 teaspoon kosher salt (adjust if you used salted broth). Stir once to distribute, increase heat to high and bring to a gentle boil.

Cook covered

As soon as the water reaches a boil, reduce heat to low so the pot barely simmers. Cover tightly with the lid and cook undisturbed for 12–15 minutes (if you soaked rice, check at 10–12 minutes) until the water is absorbed and rice is tender. Avoid lifting the lid during this time.

Steam & fluff

Turn off the heat and let the pot sit, covered, for 8–10 minutes to steam. Remove the lid, discard the bay leaf, then gently fluff the rice with a fork to separate the grains.

Finish and garnish

Stir in the chopped cilantro, lime juice and freshly ground black pepper. If using nuts, sprinkle toasted sliced almonds or cashews on top. Taste and adjust salt and pepper as needed.
