1. Prepare the Cucumber

Wash the cucumber thoroughly. Using a vegetable peeler or mandoline, slice the cucumber lengthwise into thin strips, about 1/8 inch thick. Discard the ends.

2. Prepare the Filling

In a medium bowl, combine the cream cheese, smoked salmon, fresh dill, capers, and lemon juice. Mix until smooth and well combined. Season with salt and black pepper to taste.

3. Assemble the Rolls

Lay one cucumber strip flat on a clean surface. Spread a thin layer of the cream cheese filling over the cucumber strip. Starting at one end, carefully roll the cucumber strip tightly around the filling to form a roll. Repeat this process with the remaining cucumber strips and filling.

4. Slice and Serve

Once all the rolls are assembled, slice each roll into bite-sized pieces, about 1-2 inches in length. Arrange the cucumber rolls on a serving platter. Garnish with additional dill if desired, and serve immediately.
