Prepare the Catfish

Soak the catfish fillets in buttermilk for at least 30 minutes to tenderize and flavor the fish.

Make the Coating

In a large bowl, mix together the flour, cornmeal, cajun seasoning, salt, and black pepper.

Heat the Oil

In a large, deep skillet or pot, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

Coat the Catfish

Remove the catfish from the buttermilk and allow any excess liquid to drip off. Dredge each fillet in the flour mixture, ensuring it is fully coated.

Fry the Catfish

Carefully lower the coated catfish fillets into the hot oil. Fry for about 5-7 minutes on each side or until golden brown and the fish flakes easily with a fork.

Drain and Serve

Once cooked, remove the catfish from the oil and place on a paper towel-lined plate to drain excess oil. Serve hot.
